MERIDIAN, Miss. (Queen City Newsfeed) – A “Taste of the Bayou” comes to Meridian as Don P’s Food truck officially opens.
The grand opening was Wednesday at 11 am on 5th street at Culinary Park in Downtown.
“It’s a little taste of Cajun food I got going on. Got some red beans and rice, some gumbo, I’ve got some Jambalaya. I’m going to run specials once I get going good and see how it is, I’m going to run weekly specials. Crawfish season I’m going to do crawfish,” said Owner Donnie Bilello.
Bilello is originally from Thibodaux Louisiana. He said his family has been in the restaurant business since the 50s.
“I grew up in the restaurant business. My grandpa opened up in 1950, then my daddy opened one up in 1984. Me and my brother had one. I got away from it for a while, and I’ve been working on the pipeline, and I wanted to get back with my grandkids. So, I’m just doing a little something like this to help out,” said Bilello.
Bilello said it takes him all day to cook up his cajun style meals, then he freezes them. Customers can have their food heated up at the food truck or they can take it home.
“I sell family size stuff too, we’re going to sell a lot of frozen foods to feed your family’s over the weekend and all. You can stop by and pick it up,” said Bilello.
No meal is complete without dessert.
“We’ve got pralines and cream. We’ve got strawberry creole. You got hickory coffee. Banana foster, you know, that’s a traditional New Orleans dessert,” said Bilello.
Don P’s Taste of the Bayou will be open Wednesday through Saturday every week from 11 am to 6 pm.
